Jersey Yogurt Cake
Jersey Yogurt Cake is a simple cake, and that’s why we love it! It’s tender and fluffy, barely sweet, and has a wonderful hint of flavour from our natural yogurt.
Ingredients
- 225g of Jersey Dairy Natural Yogurt
- 2 large eggs
- 150g granulated sugar
- 180ml olive oil
- 1 teaspoon vanilla extract
- Half a teaspoon of salt
- 190g plain flour
- Powdered sugar, for dusting
Method
– Preheat the oven to 180C.
– Grease a 9×5 inch loaf pan lightly with olive oil and line it with parchment paper.
– Crack the eggs into a large mixing bowl, add the sugar, and whisk until pale and frothy (approx 1min).
– Whisk in the Jersey yogurt, oil and vanilla extract.
– Add the dry ingredients to the bowl. Whisk in the baking powder and salt. Add the flour and stir with a spatula until all the flour is mixed in. A few small lumps in the batter are fine, make sure you don’t overmix!
– Pour the batter into the loaf pan and spread out evenly. Bake until the cake is lightly browned (approx 45mins).
– Let the cake cool for 10 minutes and then remove from the pan. Allow the cake to cool completely on a cooling rack.
– Dust with powdered sugar and enjoy with a cup of tea or a glass of Jersey milk!
