Beating the heat with Jersey Dairy ice cream!
With a sizzling heatwave hitting Jersey this week, we thought now was a perfect time to share some fun facts about our ice cream products!
With six available flavours, our soft scoop ice cream has become a firm fan favourite since we began production in 2001. Each flavour has been created to showcase the natural quality of Jersey milk, with recipes carefully refined to deliver incredible taste.

Vanilla – Made with fragrant Madagascan vanilla, this timeless class remains a firm favourite for all ages.
Chocolate – Rich cocoa is blended with luxurious Jersey cream to create a smooth, indulgent chocolate experience.
Strawberry – Bursting with the sweetness of juicy strawberries, this flavour is perfect for warm, sunny days.
Mint Choc Chip – Cool, refreshing mint is paired generously with chocolate chunks for a perfectly balanced treat.
Toffee Honey Crunch – Sweet, sticky toffee meets crunchy honeycomb pieces for a satisfyingly rich and textured flavour.
Coconut & Pineapple – Coconut and tangy pineapple swirls come together to deliver a refreshing, tropical delight.
Now we’ve gone over the flavours, let’s find out how it’s made!

Jersey milk is collected daily from our farms. Once it enters the factory, the milk, alongside cream and concentrated skim milk is warmed up and precisely mixed with sugars and stabilisers, to meet each individual recipe.
This mixture is then heated up again for pasteurisation, before being rapidly cooled to just 5°c. All of this occurs at an incredible 36 litres per minute! Careful monitoring at every stage ensures consistency, safety, and quality in every batch produced.
The mix is stored and aged to help bring together the delicious combination of flavours. Air is also added as the ice cream is frozen down to -5 °c.
For the recipes that need it, any additions like chocolate chunks or strawberries are added at this stage and then hand packed by staff into tubs, weighed, and placed onto a conveyor belt, which includes a metal detector for safety purposes.

When all this is done, the tubs enter a blast freezer tunnel for 24 hours, which brings the temperature down to below -18 °c, making the refreshing treat taste its best! It then enters the main freezer which is set to -28 °c. This careful process gives the soft scoop ice cream a shelf life of two years, while preserving its smooth texture, flavour, and quality
Alongside producing soft scoop ice cream for the local market, Jersey Dairy is becoming increasingly well known around the world for its luxury soft mix ice cream, often known as a “99”. Jersey Dairy’s soft mix ice cream can be enjoyed from Brighton Pier all the way up to Edinburgh Castle. An impressive 35 million Jersey soft-serve ice creams are sold across Britain each year!
