Pancakes
Happy Shrove Tuesday! Enjoy our pancake recipe with fresh Jersey Dairy ingredients and finish with your favourite sweet or savoury toppings.
Serves 4-8 pancakes depending on pan size

Ingredients
Batter
- 100g plain flour
- 2 eggs
- 300ml Jersey Dairy 2.5% milk
- Jersey Dairy unsalted butter (for greasing)
- Pinch of salt
Toppings
- 250ml pot of Jersey Dairy whipping cream
- Punnet of blueberries
- Punnet of strawberries
- Chopped banana
- Jersey honey
Method
- Put flour, a pinch of salt and 2 eggs into a large mixing bowl and stir well into a thick paste
- Add around 50ml of milk and stir well to remove lumps
- Repeat this until all milk is added and the batter resembles single cream in consistency
- Heat the pan to medium heat and spread a knob of butter around the pan
- Ladle the batter into the pan, then tilt the pan so it spreads into a thin layer.
- Leave to cook for around 40 seconds, or until bottom side is golden, then flip with a spatula or by tossing
- Cook the other side for around 40 seconds
- Whip up your cream and serve with a tasty range of fruity toppings
